Balsamic Chicken Breasts

Hello everyone!

Today I thought I would share with you a recipe that I have been making over and over again the past month, balsamic chicken from Damn Delicious! If you don't follow her blog, or follow her on Pinterest, you need to find her IMMEDIATELY. You will not regret it! Her recipes are all easy and so, so very delicious! (No pun intended!) 

This meal has become my go to on nights when I have a ton to get done, or when I am just not feeling up to spending an hour standing in the kitchen, making a disastrous mess cooking dinner. I love that this recipe is so versatile too. You can bake it off in the oven, prep it and stick it in a large ziploc bag and freeze it, or stick it into your crock pot and let it do its thing!

Without further ado, get your ingredients and lets get cooking!

Here's what you'll need:
1/2 cup of balsamic vinegar
1/2 cup of chicken broth
1/4 cup packed brown sugar
3 garlic cloves, minced
4 bone in, skin on chicken breasts. Or if you like boneless, thighs, wings, you can use what you'd like for this! I used boneless chicken breasts.
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary
1/4 teaspoon crushed red pepper flakes (optional)
Kosher salt & freshly ground pepper to taste
2 tablespoons chopped fresh parsley leaves


Start by throwing all the ingredients together into a pan that is oven safe. I like to use my ceramic cast iron pot because it transfers the heat evenly while cooking and the result is always perfect!


Stir it up.


Then toss those chicken breasts in making sure to coat both sides with the mix.


Here comes the part where I do not follow her recipe. I bake mine in the oven at 350 degrees Fahrenheit for about 45 minutes, or until done inside. Slide a knife into one of the thickest chicken breasts to check for doneness if you are unsure! It also is a good idea to flip the breasts in the middle of the cooking time, to let them soak up all the delicious flavors.


Voila! Your final result. I like to pair this dish with steamed broccoli, and sometimes a nice quinoa or rice dish. Leave me a comment below if you try this recipe at home, it won't fail you, I promise!
