Hamburger Stuffed Peppers

Hello Everybody! Today, I'd like to share with you the stuffed pepper recipe I made this week for dinner. It's very simple, and I think you will all really enjoy it! Without further ado, lets get cooking shall we?

You'll need: 
1-1 1/2 lbs of ground hamburger
1 can organic rinsed black beans
1 can organic diced tomatoes 
1 cup of uncooked rice (any kind you like) and 2 cups of water
8 green peppers
2 tsp chili powder
1 1/2 tsp onion powder
1 1/2 tsp garlic powder
1 tsp oregano
Red Pepper Flakes
1/4 tsp each salt & pepper
Monterrey Jack shredded cheese for topping
Optional: tomato sauce for topping

Start by browning your ground hamburger. When its almost done, throw in the rinsed black beans and diced tomatoes and their juices.  

While your hamburger is browning, bring the water for the rice to a boil. Throw in the rice, and cook for 20 minutes (if your instructions for rice are different, follow those!). When its done, fluff it with a fork. 

Throw in the chili powder, onion powder, garlic powder, oregano, salt, pepper, and red pepper flakes to your taste. I threw in about 1/2 tsp as we like a little kick!

Throw in the rice to your mix. 

Mix it all together. 

Turn your heat off and leave it on the burner so it stays warm while prepping the peppers. Say that a few times fast! 

Chop them in half and take out all the seeds and pulp. 

Stuff your peppers with the mix. 

Top them with the Monterrey Jack cheese. 

Cover the peppers with foil, and pop them in the oven at 375 degrees Fahrenheit for 20 minutes.  

For the last 3-5 minutes, turn the broiler on high, and uncover the peppers. Broil until the cheese is hot, bubbling and starting to brown. 

If you desire, top with tomato sauce for serving. Wait a few minutes for them to cool before digging in, these will be super hot! 

If you so desire to make these ahead of time, you can put these together and cover and freeze. Just note that the baking time will be much longer, about 50-60 minutes, or until heated through.

Charleston In The Spring

Spring time is my absolute favorite time of year here in Charleston. Since we found out we are moving very soon, I have been taking as much advantage of getting out of the house as I can and enjoying the scenery around the area. Here are some of my absolute favorite spots. Enjoy :)
